Appassimento is a unique wine style becoming very popular in Italy. It consists of semi-dried grapes fermenting on the skins to produce an intensly colored and flavored rendition of the grape delivering outstanding value and drinkability. Our Santodeno Sangiovese Appassimento has intense red color and red fruits with a soft, full palate.

Tenuta Santodeno is a portion of land locally known as Santoddone, literally translated as "Holy Women". Produced in the most historical cellar of the Bidente valley, Santodeno has been making wine in Emilia-Romagna since 1920.

Tenuta Santodeno is a portion of land locally known as Santoddone, literally translated as “Holy Women”. Produced in the most historical cellar of the Bidente valley, Santodeno has been making wine in Emilia-Romagna since 1920.

WINEMAKING / VINIFICATION:

The ‘appassimento’ style refers to grapes which have been hand-picked and then dried out to concentrate the sugars – a process that is practised widely in the north-eastern regions of Italy. Vinified in stainless steel tanks at 18/28°C for 7 days with daily pumpovers and 1 delestage. 30%of the grapes are hand-picked and placed in cases that will be stored for 4 weeks in a controlled temperature fruit chamber room. 70% of the grapes are picked over ripes. Traditional fermentation.

AGING & BOTTLING:

30% of the blend rests for 6 months in 25hl oak casks. HARVEST:
From September 10th To October 10th

30% of the blend rests for 6 month in 25hl oak casks, static fining, cross flow and microfiltration at the end.
