Tasting notes

With an opaque red color and intense aromas of black and red fruits and spice, the palate is lush and brooding with soft tannins and an off-dry finish.

Food pairings

It is suitabe for rich dishes, going equally well with foie gras patè, red meats and stews. The Passivento style also perfectly matches with traditional Porchetta.

BRAND BACKGROUND:

From the province of Trapani in Santa Ninfa, Barone Montalto are the most enjoyed of all Sicilian wines, known the world over for their varietal purity, authentic modern style, unsurpassed value and vesatility.

WINEMAKING / VINIFICATION:

Passivento® method. The partial drying of the fruit begins in the vineyard and is completed in the fruit chamber, where the skillful control of ventilation assist the grapes in reaching the ideal level of dehydration before pressing.

AGING & BOTTLING:

The 100% authentic Nero d’Avola Grapes are obtained from partial withering on the vine. Maceration for 12-15 days at 26° C with daily pump over. Once racked, it is aged in French oak barrels in the first and second stage for about 4 months.

ELEVAGE:

Fining used- Gelatine.
Filtration: Cross flow 1 micron and pre- bottling microfiltration 0.45 micron.
